I am going to my first pig roast BBQ next week. There is going to be a block party on the block where my house will be built. I guess it will be vinegar since this is eastern, NC. All the pork here is so terrific. Much more tender and flavorful than in NY. I guess it is because it is so fresh.
Lexington is where they were going to have the festival that the legislature was voting to make it the State BBQ Festival. That is what started the recent argument. I guess I will check out western BBQ this summer when I vacation in the mountains in Boone.
